The KOTAI Santoku with an 18 cm blade is an all-round kitchen knife you'll reach for often. Santoku means "three virtues," and you'll immediately notice why: the knife is designed for vegetables, fruits, meat, and fish. Its thin, 1.8 mm blade cuts precisely without crushing food, preserving flavor and texture.
What makes this knife special is the combination of traditional Japanese techniques and Western robustness. The blade is forged from ultra-sharp Japanese 440C high-carbon stainless steel and features a hammered (Tsuchime) pattern that creates air pockets between the blade and the food. This prevents food from sticking to the blade, allowing for smoother and more efficient cutting.
The handle is made of black pakkawood with a hidden full tang that extends to the butt of the handle. This gives the knife extra durability and perfect balance during use. Each knife comes with a bamboo saya (sheath) and a bamboo box, ideal for safe storage and neat presentation.
For those who want results: the KOTAI Santoku, according to specifications, stays sharp up to 10 times longer than many other knives thanks to the high carbon content in 440C. The HRC hardness of approximately 60 (+/-1) ensures excellent edge retention without the blade becoming too brittle. And because it contains stainless steel, the knife resists corrosion with normal use and maintenance.
